You can edit your profile to keep it open.
Click on the 'edit profile' button under the profile selector in the bottom left before clicking 'play'. This will bring up a dialog box. One of the options defaults to 'Close the launcher when the game opens'.
Change this to 'Keep the launcher open'.

You can also try this method, this is just something I came up with for another stackexchange post. Please view my repo Here, as it will not only answer your question but will also probably help others. This just an addon to those whome have already given a good answer and is correct. This is however, another method I personally use creating Custom Minecraft Launchers for players. Any questions are welcome there or here. Thanks for reviewing and considering reading this far.
PS. There's also a Release version there for you to try it and see for yourself as well. Read the README.md on where to put it. Also bare in mind, the cli console will be minimized and your able to view it anytime you want. However this does not change your question and their answers, its more of a a cool thing at a spare moment.
